Maestro HE

Maestro HE is a professional countertop batch freezer, which is perfect for catering.
Thanks to its Hot-Cold-Dynamic® and Adaptive technology, exclusive to the Carpigiani brand, Maestro HE can automatically recognise the quantity and type of mix added, while dynamically modulating hot and cold gas to optimise heat exchange during mixing. Furthermore, during the processing cycle for making creams, sauces and little chocolates, hot gas is adjusted to prevent burning.

Quality

With Maestro HE, you have an ice cream parlour and a patisserie in just one machine:

  • 13 ice cream programmes,
  • 2 programmes for Sicilian granitas and cremolatas,
  • 6 cycles for making sauces and toppings,
  • 6 programmes for making different types of creams,
  • 6 programmes for processing chocolate,
  • 6 special programmes for desserts and ice cream.

Performance

Maestro HE is equipped with:

  • A beater with no central shaft and POM blades to remove all the ice cream.
  • Self-adjusting scraper pads so the cylinder is constantly clean and performs well.
  • Post-cooling: the cold setting is turned on when the ice cream is removed to keep its consistency intact.
  • A control switch to start production, extraction, cleaning or to stop the machine.
  • LCD display: showing the ingredients to be added during the processing phases to assist you when making recipes.
  • The machine comes with a recipe book.

Convenience

Using Maestro HE is easier than ever thanks to its features:

  • the machine is always used standing upright.
  • It is fitted with a stainless steel shower head, with a safety catch, on the front of the machine to make it easier to wash.
  • With Easy Way, you can make and pasteurise the mixture with the batch freezer.
  • It has a mat to stop the tray from moving so it is easier to remove the mixture and add swirls.
  • The processing menus are customisable.

Saving

Carpigiani’s High Efficiency technology helps reduce production times and cut electricity and water consumption by up to 30% compared with previous generations of Carpigiani batch freezers (30% less than RTX models).

Safety – Hygiene

Working with Maestro HE is always safe:

  • Accident prevention thanks to the rounded and connected corners.
  • Auto Defrost, a procedure for quickly restarting production after a power failure or accidental halt.
  • Thermal-insulating door with safety latch.
  • One-piece cylinder for the best cleaning and guaranteed hygiene.
  • Hot rinse, detachable outlet chute, and Scotch-Brite treatment on the steel blades for easy cleaning.
  • The delayed cleaning cycle guarantees safe hygiene by controlling the temperature of the cylinder once the ice cream has been removed.

Options

  • Optional portioning hatch, which together with the Crystal programme is used for filling containers and tubs.
  • Optional Water Filling, to provide the exact quantity of water required, saving time and preventing batching errors.
  • Optional ice cream beater, for making ice cream with the special programme.
  • Optional Teorema app: online monitoring and diagnostics for easier assistance.
