The Hiber 021 blast chiller is the professional choice for fast blast-chilling (with the surface hardening in just a few minutes) and allows the formation of micro-crystals which stabilise all the properties of the product for many hours and help keep decorations at the same height.

You can also deep-freeze the entire tubs (down to -18°C in the centre in a few hours, making it rock solid for storage) as well as any hard products (shop window cakes, mousses, Bavarian creams, semifreddos, single portions or ice cream cakes).

Hiber is the essential choice for ensuring the highest safety standards for products: in fact, quick freezing effectively blocks off any fungi and bacteria that spread due to certain environments, sudden changes in temperature, moisture, heat or prolonged exposure.
It offers excellent hygiene standards strictly observed right from construction (it has an ergonomic structure with rounded corners and no joints to make cleaning easier), which are also safeguarded and certified for use under the latest European legislation (Hiber safety standards comply with the HACCP system, Hazard Analysis and Critical Control Points).

In particular, the Hiber 021 blast chiller is equipped with:

  • Rounded corners and a water drain. A chamber with well-rounded corners both inside and outside, which prevent the build-up of dirt and bacteria. A rinse water drain on a diamond-patterned floor with a central drainage hole and bayonet plug.
  • An opening deflector plate. The evaporator is completely enclosed in a stainless steel casing with a hinged deflector plate.
  • A heated core probe. All models are fitted with a button to heat up the core probe needle. This is necessary when you have to extract the probe from a frozen product. The timed heating device allows for instant and perfect extraction after every deep-freezing session.
  • Sterilox. This is a removable sterilisation device, which is handy and easy to move around inside the blast chiller or on other equipment.
  • Tray Rack. Double-fitted, fully removable and can be washed separately.
