Pastomaster 120 HE is the Carpigiani pasteuriser equipped with smart technology that provides the best care for your mixture.
In fact, the ingredients are mixed and pasteurised inside the cup exchange pump, which is found on the bottom of the container. On the one hand, this exclusive patented Carpigiani technology guarantees high micronisation because the cup-beater millimetric joint and the various mixing speeds reduce fat globules to particularly tiny sizes, from 2 to 5 microns, to get creamier, firmer gelato and, on the other hand, it lets you work with minimal batches without the risk of burning the mixture. Furthermore, the original dry heat bain-marie prevents the product from forming a crust, and as it comes in a single piece, it guarantees the highest hygiene standards even when using raw milk. Furthermore, the removable conveyor lets you manage mixtures with varying viscosity.

SAFETY – HYGIENE

Hygiene and safety are essential requirements for a pasteuriser. Pastomaster HE is designed to be the most efficient in this field:

  • Once it exceeds 50°C, the churning stops when you lift up the cover to prevent the boiling mixture from spraying you.
  • An ergonomic design thanks to the rounded and connected corners.
  • In the event of a blackout or an interruption to the water supply, it checks whether the mixture has been altered or not based on the time and temperature settings and, if so, it starts a new pasteurisation cycle.
  • The mixture circulates continuously inside the temperature-controlled tap, ensuring it stays at the right working temperature.
  • It can be fully cleaned thanks to the new tap, the removable conveyor, the one-piece cup and the Scotch-Brite treatment on the blades.
  • The stainless steel shower head extends up to the tap to make it easier to clean.
